Kaanji is a feremented drink with a pungent tangy taste. It is a great probiotic, enhances digestive strength. It is a popular drink in North India during the summer.

2 large organic beet
2 large organic carrots (purple or red)
2 tbsp mustard seeds
6 cups water

Wash beetroot and carrots, peel off the skin or leave it intact. Slice them into long pieces and put them in a jar. Crush mustard seeds to coarse powder. Add mustard seed powder and fill the jar with water. Cover with cheesecloth and put the jar sit on a sunny window  for 7 days. Stir the mix once daily.

Optional: Pink himalayan salt or black salt can be added.
